Lets cook
Last week I printed a couple recipes for the grill. Sometimes I like to prepare the entire meal on the grill, vegetables and potatoes! This first recipe is one I have not tried yet, but it sounds great. I plan to try it soon.
Grilled Veggies
makes 6 servings
2 Tbsp honey
4 tsp balsamic vinegar
1 tsp oregano
1/2 tsp garlic powder
1/8 tsp pepper
dash salt
1 lb asparagus, trimmed
3 carrots, cut on half lengthwise
1 large red pepper, cut in 1″ strips
1 yellow summer squash, cut in 1/2″ slices
1 med. red onion, cut in wedges
Whisk the first seven ingredients. Place 3 Tbsp mixture in a large bowl. Add veggies, toss to coat. Cover and let marinate at room temperature 1 1/2 hours. Place veggies on a grilling grid or basket. Grill, covered, over medium heat till crisp-tender, 8 to 12 minutes, turning occasionally. Place on a serving platter, drizzle with remaining marinade.
The beauty of the above recipe is that you can use any vegetables you want, in any combination. Please be careful to not overcook! If you don’t have balsamic vinegar, you can use apple cider vinegar with a bit of sugar blended in. (the ratio is 1 Tbsp vinegar and half Tbsp sugar).
This next recipe is a tried and true recipe in my household. When I don’t want to turn on the oven, or even be at the stove, we make these potatoes on the grill.
Savory Grilled Potatoes in Foil
makes 6 servings
1/2 cup Miracle Whip
3 garlic cloves, minced
1/2 tsp paprika
1/4 tsp salt
1/4 tsp pepper
3 baking potatoes, cut in 1/4 inch slices
1 large onion, sliced
Mix the Miracle Whip and seasonings in a large bowl. Stir in the potatoes and onions, coat well. Divide potato mixture evenly among six 12 inch square pieces of heavy duty foil. Seal each to form a packet. Place packets on grill over medium hot heat. Grill, with cover closed, 25 to 30 minutes or until potatoes are tender.
When I make this for just the two of us, I put the potatoes in one packet, using a bigger piece of foil.
