This week I have a couple recipes for you that were sent by R. H. Kirch of St. Clair County. This first one is for Strawberry Pie, and although I have not made it, I think it sounds easy to make.Strawberry Piesubmitted by R. H. Kirch3 oz strawberry Jello1 2/3 cup hot water2 cups CoolWhip2 Tbsp sugar1 9″ baked pie crust1 1/2 cups strawberry halvesDissolve Jello in hot water. Cool slightly, until thickened. Mix 1/2 cup of the Jello with Cool Whip and sugar, blending well. Spread bottom and sides of baked pie crust. Stir the berries into the rest of the Jello. Spoon over the Cool Whip mixture. Chill at least three hours. (Note: if you use frozen strawberries, reduce the amount of hot water to 1 1/3 cup).Apple Puddingsubmitted by R. H. Kirch1 1/2 cup sugar1 cup flour, sifted2 Tbsp baking powder1 tsp salt2 eggs1 cup chopped nuts2 cups apples, dicedBeat eggs. Add sugar, flour, baking powder and salt. Mix well. Add apples and nuts. Pour into a 13×9 pan. Bake at 375 degrees for 35 minutes.Ms. Kirch says this apple pudding is good served warm or cold. She recommends serving with a dollop of whipped cream. I bet it’s good warm with a scoop of ice cream! This next recipe also comes from Ms. Kirch, and it sounds interesting. It mixes peas and Rice Krispies!Pea Casserolesubmitted by R. H. Kirch1 small onion, chopped1 stick butter2 cans peas2 cups Rice Krispies1 can cream of mushroom soup2/3 cup Milnot2 cups fine bread crumbsBrown onion in butter. Add peas, Rice Krispies, soup and Milnot. Place in a casserole dish. Top with bread crumbs. Bake at 350 degrees for 30 minutes or until hot and crumbs browned.I don’t see many recipes for Milnot, and it can be hard to find in stores. Milnot is the brand name for an evaporated filled milk, meaning the butterfat has been removed and replaced with soy oil. If you can’t find Milnot, you can use an equal amount of evaporated milk.
