With this cool weather upon us, it’s time for “comfort food”.  I am sure everyone has different ideas as to what qualifies as comfort food. I looked it up online to find this definition: “Comfort food is food that provides a nostalgic or sentimental value to someone, and may be characterized by its high caloric nature and simple preparation.”. Yep, that’s a good definition of comfort food. However, I tend to think of comfort food as: “My grandma used to make this!”. This week I have a recipe that is cooked in your slow cooker and it definitely qualifies as comfort food. This is good served with mashed potatoes.

One-Dish Chicken Supper

4 boneless, skinless chicken breast halves

10 3/4 oz cream of chicken soup

1/3 cup milk

1 pkg Stove Top stuffing mix

1 2/3 cup water

Place the chicken in slow cooker. Combine soup and milk. Pour over the chicken. Combine stuffing mix, seasoning packet and water. Spoon over the chicken. Cover and cook on low for 6 to 8 hours.

 Note about the above recipe, you can use cream of celery soup or cream of mushroom soup instead of cream of chicken for extra flavor.

Here is a simple recipe for easy to make potatoes, it’s so easy to make and thus the name, Easy potatoes. I found this recipe years ago in a church cookbook.

Easy Potatoes

1 can cream of celery soup

3 cups sliced potatoes

1/2 cup chopped onions

1 cup grated cheese

Put soup and 1 soup can of water in a deep casserole. Add potatoes, onions and cheese. Stir and cover. Bake at 400 degrees for 30 minutes or until tender.

I love the flavor of cream of celery soup, but if your family does not, use cream of mushroom soup. There are several ways to keep this recipe simple to make. No need to peel the potatoes, unless you prefer them peeled. Also, I always have pre-chopped onions in the freezer ready to go. The recipe does say it takes 30 minutes to bake, but the few times I made this, it always took closer to an hour.
